Seaweed (Gim) has been part of the Korean diet for much of the country's 5,000 years of history. Appreciated for its health benefits and delicate flavor, it has played, and continues to, a major role in Korean cuisine. Gim is a piece of the ancestral Korean culture as opposed to a mere condiment.

KIMUGIMU ties our mission to an ageless tradition and strives to bring authenticity to a product whose original flavors have often been compromised by mass manufacturing practices. We only select the finest seaweed from the best farms, gently roast it at our Tokyo shop every day, and carefully package the final product in order to deliver you with the best experience.

海苔(韓国語で「ギム」)は、五千年に韓国の歴史の中で、常に重要な食材であり続けて参りました。海苔は、その繊細な香りにもまして、その滋養作用により、韓国料理の世界において、重要な役割を果たして参りましたし、今後もそうあり続けるものと考えております。海苔は、単に薬味であるだけではなく、先祖代々伝えられてきた韓国文化の重要な一部でもあります。

KIMUGIMU roasted seaweed sheets are confectioned from the best ingredients, hand-picked for their outstanding nutritional and culinary qualities. Our three varieties of seaweed — ORIGINAL (pyropia), PALÉ (green seaweed) and DOL ("rock" seaweed) — are all harvested in the most renowned farms. We exclusively use seaweed grown on bamboo poles anchored on the sea floor, a traditional technique that allows the plant to be successively exposed to the sun and immersed underwater as the tide fluctuates. This dual-environment cultivation method fosters photosynthesis and produces seaweed that is richer in nutrients and of higher quality than those grown in an exclusively marine environment.

We then bake the precious greens with the finest perilla oil directly at our shop in Tokyo and season them with a sprinkle of pure sea salt. That's all. Our seaweed sheets do not contain any additives. Because we bake them daily in limited quantities, we can guarantee that they are always fresh and crispy!

Edible seaweed is low in calories and one of the richest sources of minerals in the vegetable kingdom as it has ready access to the abundant resources of the ocean, and nourished through the gentle underwater currents and the sunlight they bathe in. For centuries, new mothers in Korea have replenished themselves with seaweed soup to assist them in their postpartum recovery and rejuvenation. According to ancient Korean folklore, this postpartum tradition was learned from observing female whales that would seek out and eat strands of seaweed after giving birth.

Perilla oil is a very rich source of the omega-3 fatty acid ALA (alpha-linolenic acid) &emdash; with a content of 50 to 60% in mass &emdash; which provides a wide range of health benefits, from the prevention of cardiovascular diseases to the reduction of inflammation. Perilla oil also promotes plump, hydrated skin, and may even help treat some skin disorders like eczema and psoriasis.
